Description – Sorbitan tristearate is a liophilic emulsifier that is used as crystal-modifying agent in fats, where it prevents the formation of high-melting β-crystal. It perfoms this function possibly due to its ability to co-crystallise with triacylglycerides in the β’-crystal form, that prevents a solid-state crystal transition to the higher-melting β-crystal form during storage.
Application – Sorbitan Tristearate is an effective emulsifier to retard fat bloom in chocolate. It is also used as a crystal inhibitor in margarines, low fat spreads, palmolein and coconut oil.
