  • Description – Pectin is a branched heteropolysaccharide consisting of long-chain galacturonan segments along with other neutral sugars such as galactose, rhamnose, arabinose, and xylose. It is a fibre found in fruits. It has numerous applications in foods, pharmaceuticals, and other industries.
  • Application – It is used as thickener, gelling agent, emulsifier, stabilizer, and sugar or fat replacer in low-calorie foods. Pectin and its oligosaccharide derivatives are an important ingredient in functional foods. It is also used in making medicines for high cholesterol, high triglycerides, heartburn, and many other conditions.
